Dry Natural Casing: Prepare natural casings by soaking cleaned small intestines in water for 1-2 days, removing oil and fascia, and treating with a sodium hydroxide solution for 70 minutes. Rinse thoroughly to remove any odor, then soak in clean water for 24 hours with frequent water changes. Salt for 24 hours, rinse again, and inflate with air to check for leaks. Hang to dry in a well-ventilated area. Once dry, expel air, spray with water, and flatten for packaging.
